Chicken Liver Pilaf

Ingredients
- 2 cups rice
- 2 cups water
- 1 lb chicken liver
- 5 tablespoons butter
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 tablespoon red chili pepper, minced
- 1⁄8 teaspoon allspice
- 1⁄8 teaspoon cinnamon
- salt
- pepper
- 1 cup peas
- 1 cup Baby Spinach, chopped
- 6 green onions, chopped
- 1 tablespoon cilantro, chopped
- 1 tablespoon parsley, chopped
- 2 tablespoons pine nuts
Directions
- melt 3 tablespoons butter
- saute onion and garlic
- dash a little allspice and cinnamon on liver let marinade
- add rest of spices to onion add chili
- let sweat
- wash rice drain
- add to onion
- stir so all gets coated
- add salt and pepper
- add water bring to a boil.
- cover
- simmer 15 minutes
- in saute pan add butter then liver brown them remove.
- then saute peas and spinach add to rice when wilted
- saute pine nuts
- add to rice add herbs and cover for 5 minutes
- plate top with liver.
