Chicken Lemon Grass Curry

Ingredients
- 2 stalks lemongrass, smashed and cut into 1 inch pieces
- 2 tablespoons oil
- 1 small onion, thinly sliced
- 2 teaspoons garlic, minced
- 1 1⁄2 lbs chicken, boneless skinless and cut into strips
- 1⁄2 teaspoon black pepper
- 2 tablespoons fish sauce
- 1 pinch sugar
- 1 teaspoon rude curry paste
- 1 chile, hot red minced
- 2 tablespoons chicken broth (or water)
- 1⁄2 cup coconut milk
- 2 tablespoons peanuts, chopped
- 1⁄4 cup cilantro, chopped
Directions
- In a hot wok over high heat add oil, onions and garlic. stir fry 1 minute.
- Add chicken, pepper, lemon grass, fish sauce, sugar, curry and chili. Stir fry 3 minutes or until fragrant.
- Add broth and simmer about 5 minutes.
- Add coconut mils and simmer 3 minutes until slightly thickened and creamy.
- Garnish with peanuts and cilantro. Serve with rice.
