Chicken & Gnocchi Soup

Ingredients

  • 1  onion, finely diced
  • 1  cup carrot, finely chopped
  • 3  tablespoons butter
  • 3  tablespoons flour
  • 8  cups chicken broth
  • 2  cups water, if too thick
  • 2  teaspoons  better than bouillon if you add water
  • 1  package  mini  gnocchi
  • 1  rotisserie chicken, breast meat chopped
  • 1 (2 ounce) bag  Baby Spinach, finely chopped
  • 12-1  cup heavy cream or 12-1  cup half-and-half

Directions

  1. Melt butter and sautéed onion and carrot for 3-5 minutes.
  2. add flour and cook 1-2 minutes.
  3. add broth, water, better than boulion , bring to boil.
  4. add spinach and cook until wilted.
  5. Add gnocchi and cook 4 minutes.
  6. Turn off heat and add cream. Do not boil after cram is in soup.
