Chicken & Gnocchi Soup

Ingredients
- 1 onion, finely diced
- 1 cup carrot, finely chopped
- 3 tablespoons butter
- 3 tablespoons flour
- 8 cups chicken broth
- 2 cups water, if too thick
- 2 teaspoons better than bouillon if you add water
- 1 package mini gnocchi
- 1 rotisserie chicken, breast meat chopped
- 1 (2 ounce) bag Baby Spinach, finely chopped
- 1⁄2-1 cup heavy cream or 1⁄2-1 cup half-and-half
Directions
- Melt butter and sautéed onion and carrot for 3-5 minutes.
- add flour and cook 1-2 minutes.
- add broth, water, better than boulion , bring to boil.
- add spinach and cook until wilted.
- Add gnocchi and cook 4 minutes.
- Turn off heat and add cream. Do not boil after cram is in soup.
