Chicken for One With Orange Sauce

  1. Trim the chicken thighs of excess fat and cut them into three or four pieces.
  2. Place the chicken in a steamer lined with baking paper.
  3. Steam the chicken for about five minutes.
  4. Grate the orange rind finely and mix it with the mayonnaise.
  5. Heat the orange juice and sugar in a fry pan until it begins to bubble and thicken. As the sauce thickens the bubbles increase in size.
  6. Add the chicken and its juices to the pan and fry in the orange sauce for thirty seconds each side.
  7. Serve topped with mayonnaise with a salad or vegetables of your choice.
