Chicken Dopiaza

Ingredients
- 4 large onions, peeled and finely chopped
- 4 garlic cloves, minced
- 4 boneless skinless chicken breasts, cut into bite sized pieces
- 2 ounces cilantro, chopped
- cooking spray
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 2 teaspoons ground cinnamon
- 2 teaspoons ground cumin
- 1 pinch salt and pepper
- 1 3⁄4 cups chicken broth
- 14 ounces chopped tomatoes
Directions
- Spray a large frying pan with cooking spray.
- Cook the spices over a low heat for about 30 seconds. Add the onions and saute for 3-4 minutes.
- Add the garlic and chicken to the pan and season well with salt and pepper.
- Add the broth and chopped tomatoes and bring to the boil. Reduce the heat to medium-low and cook for 30 minutes or until the chicken is cooked through, stirring occasionally.
- Serve with your choice of accompaniments.
