Chicken Chow Mein Casserole

I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts. Show more

Serves: 4

Ingredients

  • 2  cups  diced  cooked chicken
  • 14 cup  chopped onion
  • 1  cup  finely slivered celery
  • 1  tablespoon butter
  • 1 (10 3/4ounce) can  cream of mushroom soup
  • 13 cup chicken broth
  • 1  tablespoon soy sauce
  • 3  drops  hot pepper sauce
  • 18 teaspoon pepper
  • 1  cup  chow mein noodles
  • 13 cup cashews

Directions

  1. Saute onion and celery in butter.
  2. Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
  3. Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.
  4. Bake at 350 for 20 minutes.
