Chicken Cacciatore

Ingredients
- 2 tablespoons oil
- 1 lb extra thin sliced roaster chicken breast, cut into cubes
- 2 tablespoons oil
- 2 teaspoons minced garlic
- 1⁄4 cup frozen chopped onions
- 1 green pepper, cut into big chunks
- 1 (8 ounce) package fresh mushrooms, sliced
- 1 (14 1/2ounce) can diced tomatoes, in sauce
- 1⁄4 cup white wine
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 (12 ounce) package fettuccine, cooked according to directions on package
Directions
- In a skillet brown chicken breasts in 2 tablespoons oil. Set aside.
- Brown garlic and onions in second 2 tablespoons of oil in a saucepan(use bigger saucepan).
- Add peppers and mushrooms to garlic and onions. Cook until they are a little soft.
- Add tomatoes, wine, salt and pepper. Bring to a boil.
- Add chicken to tomatoe sauce. Simmer for 15 minutes.
- Pour tomatoe sauce mixture over pasta.
