Chicken Cacciatore

Classic Chicken Cacciatore. Chicken, tomatoes, green peppers and mushrooms.

Ingredients

  • 2  tablespoons  oil
  • 1  lb  extra thin sliced roaster chicken breast, cut into cubes
  • 2  tablespoons  oil
  • 2  teaspoons  minced garlic
  • 14 cup  frozen chopped onions
  • 1  green pepper, cut into big chunks
  • 1 (8 ounce) package fresh mushrooms, sliced
  • 1 (14 1/2ounce) can diced tomatoes, in sauce
  • 14 cup white wine
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 1 (12 ounce) package fettuccine, cooked according to directions on package

Directions

  1. In a skillet brown chicken breasts in 2 tablespoons oil. Set aside.
  2. Brown garlic and onions in second 2 tablespoons of oil in a saucepan(use bigger saucepan).
  3. Add peppers and mushrooms to garlic and onions. Cook until they are a little soft.
  4. Add tomatoes, wine, salt and pepper. Bring to a boil.
  5. Add chicken to tomatoe sauce. Simmer for 15 minutes.
  6. Pour tomatoe sauce mixture over pasta.
