Chicken Cacciatore

Ingredients
- 1 kg boneless skinless chicken thighs, cut into cubes
- 3 tablespoons oil
- 1⁄2 onion, chopped
- 6 tablespoons green peppers, minced
- 2 garlic cloves, minced
- 14 ounces canned tomatoes
- 1⁄4 teaspoon thyme
- 1⁄2 cup tomato sauce
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon allspice
- 1 bay leaf
- cayenne pepper
Directions
- Heat oil in a frying pan. Fry chicken until no longer pink.
- Add onion, green pepper and garlic. Brown lightly.
- Add remaining ingredients. Simmer uncovered 30 minutes.
- Serve with rice or pasta.
