Directions

  1. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4 inch thickness using a meat mallet or rolling pin.
  2. Sprinkle with salt and pepper.
  3. Melt butter in oil in a skillet over medium-high heat; add chicken, and cook 2 minutes on each side or until done.
  4. Remove chicken, and keep warm.
  5. Reduce heat to medium.
  6. Add onions and next 4 ingredients to skillet; cook, whisking constantly, until bubbly.
  7. Stir in parsley.
  8. Pour over chicken; serve with rice.
