Chicken and White Bean Chili

Ingredients
- 4 boneless skinless chicken breast halves
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 (4 ounce) can diced green chilies
- 2 (15 ounce) cans white kidney beans
- 3 cups chicken broth
- 2 teaspoons oregano
- 1 teaspoon cumin
Directions
- Place chicken in lightly sprayed crock pot.
- Add onion, garlic, and green chilies.
- Rinse beans in cold water, drain and add.
- Add oregano and cumin.
- Add chicken broth, stir to mix.
- Cook on low 6-8 hours or 2-4 hrs on high.
- Before serving, shred chicken with forks.
- Chili will be thin. Mash some of the beans to help thicken, or add some flour or cornstarch to suit.
- Serve with shredded cheese and / or hot sauce to taste.
