Chicken and Sausage Rice

Ingredients
- 5 ounces long grain rice
- 6 ounces chicken stock
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 yellow pepper, sliced
- 1 small red onion, chopped finely
- 1 chicken breast, cubed
- 2 sausages, chorizo style, cubed
- 1 garlic clove, diced
- 5 tablespoons white wine
- 1⁄4 cup flat leaf parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Directions
- In a pan, fry the dry uncooked rice and half of the small onion in a little olive oil until the onion is beginning to soften.
- Add the chicken stock.
- Bring the rice, to the boil, so that it boils hard and produces steam. Turn the heat down and let it simmer so the rice absorbs the liquid.
- Heat some oil in another pan. Add the chopped peppers and the rest of the onion and cook on a medium heat for two minutes.
- Add the chicken and sausage, stirring continuously until thoroughly cooked.
- Add the white wine and cook for another three minutes.
- When the rice is cooked, stir it into the other pan along with the flat leaf parsley and lemon juice.
- Serve immediately.
