Chicken and Sausage Rice

  1. In a pan, fry the dry uncooked rice and half of the small onion in a little olive oil until the onion is beginning to soften.
  2. Add the chicken stock.
  3. Bring the rice, to the boil, so that it boils hard and produces steam. Turn the heat down and let it simmer so the rice absorbs the liquid.
  4. Heat some oil in another pan. Add the chopped peppers and the rest of the onion and cook on a medium heat for two minutes.
  5. Add the chicken and sausage, stirring continuously until thoroughly cooked.
  6. Add the white wine and cook for another three minutes.
  7. When the rice is cooked, stir it into the other pan along with the flat leaf parsley and lemon juice.
  8. Serve immediately.
