Chicken and Noodle Casserole

Basic comfort food. Easy to prepare after a busy day at work.

Yields: 1 casserole

Ingredients

  • 10  ounces  cream of mushroom soup (1 can)
  • 12 cup  whole milk
  • 14 teaspoon white pepper
  • 14 cup asiago cheese, grated
  • 1  cup  mixed vegetables, frozen
  • 2  cups chicken, cooked, diced
  • 2  cups  egg noodles, cooked and drained
  • 12 cup sharp cheddar cheese, shredded
  •  cooking spray

Directions

  1. Spray a 1 1/2-quart casserole dish with cooking spray.
  2. Pre-heat the oven to 400 degrees F.
  3. Carefully blend soup, milk, pepper, Asiago cheese (or Parmesan or Romano), vegetables, chicken and noodles in a mixing bowl and then transfer it to the casserole dish.
  4. Top with the cheddar cheese and "tent" the dish with aluminum foil.
  5. Bake for 30 minutes.
  6. Serve hot.
