  1. Put chicken in boiling water; cook over med.
  2. heat 15 minutes Remove, let cool and shred by hand.
  3. Peel cucumbers, cut into strips and put in large bowl.
  4. Combine chicken and cucumbers.
  5. Mix soy sauce, vinegar, sugar, sesame oil, and minced garlic.
  6. Mix with chicken.
  7. Sprinkle scallions on top.
