Chicken and Cashew Salad Recimeal

Ingredients
- 2 cups pasta, rotini, uncooked
- 1 cup pea pods, cut in 1-inch pieces
- 2 (10 ounce) cans premium chunk breast chicken, drained and flaked
- 1 (5 ounce) can water chestnuts, drained
- 1⁄2 small red bell pepper, cut in 1-inch pieces
- 1⁄2 cup chopped red onion
- 1⁄2 cup shredded carrot
- 1 cup light mayonnaise or 1 cup salad dressing
- 1⁄2 cup packed brown sugar
- 1 tablespoon cider vinegar
- 1⁄4 teaspoon salt
- 1⁄2 cup roasted unsalted cashews
Directions
- Prepare pasta according to package directions, adding pea pods during last 30 seconds of cooking. Drain and cool pasta and pea pods. In a large bowl, combine pasta and pea pods with chicken, water chestnuts, bell pepper, onion and carrots. Combine mayonnaise, brown sugar, vinegar and salt; toss with salad. Refrigerate for several hours or overnight. Just before serving, fold in cashews.
