Chicken and Blue Cheese Salad

  1. Divide the little gems or romaine among four plates.
  2. Strip the meat from the chicken, keeping it fairly chunky and discarding the skin.
  3. Arrange the chicken on top of the lettuce.
  4. whisk together the oil and wine vinegar with some salt and pepper to taste.
  5. Add the soured cream and mayonnaise, then mix in the cheese.
  6. Drizzle over the chicken and lettuce and top with croutons.
