Chicken and Bean Burritos

Yields: 1 tortilla
Ingredients
- 2 teaspoons olive oil
- 1 lb chicken breast, cut into strips
- 1 onion, diced
- 1 garlic clove, minced
- 1 teaspoon chili powder
- 1⁄2 teaspoon cumin
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 cup black beans, drained
- 4 whole wheat tortillas
- cooking spray
- 1⁄2 cup low-fat cheddar cheese, shredded
- 1⁄2 cup low-fat sour cream
Directions
- 1. Heat oil in a frying pan.
- 2. Add the chicken, onion, garlic, chili powder, cumin, salt and pepper. Saute until chicken is cooked through.
- 3. Add beans and cook another 2-3 minutes until heated.
- 4. Fill tortillas with chicken and bean mix, top with cheese and wrap.
- 5. Spray tortilla with cooking spray and heat in frying pan for 1 minutes per side.
- 6. Serve with sour cream.
