Chicken Ala Goopy

This recipe has been a favorite in my family for over 20 years. It got this crazy name when my son was a little fella and asked for "chicken with goopies" it took me a while to figure out he was asking for the following recipe which I had tried out on the family the week previous. The chicken is fall apart tender and the sauce is not at all what you'd expect from the ingedients. It's similiar to a sweet and sour chicken. It couldn't be easier! Show more

Serves: 6-8

Yields: 1-2 pieces per person

Ingredients

  • 4  lbs chicken parts (your favorites, breasts, legs, thighs or a mixture)
  • 1  ounce  dry onion soup mix (like Lipton)
  • 18  ounces  of pineapple  apricot jam
  • 16  ounces  Russian salad dressing
  • 2  cups water

Directions

  1. Preheat oven to 350 degrees.
  2. Arrange chicken skin side down in a large pan.
  3. Mix all other ingredients together, stirring well to break up the jam.
  4. Pour 1/2 the mixture over the chicken.
  5. Bake at 350 degrees for 30 minutes.
  6. Turn chicken skin side up and pour the remaining sauce over the chicken.
  7. Bake an additional 30 - 45 minutes, until done.
  8. Arrange on serving platter and spoon extra sauce over chicken.
  9. We like this served with egg noodles and a green veggie. The sauce is delicious over the noodles.
