Cheyenne " Chicken"

This comes from the collectors edition of The Original Cowboy Cookbook of 1840.

Serves: 6

Ingredients

  • 1  lb  boneless veal steaks
  • 1  lb  pork steak
  • 1  beaten egg
  • 12 cup milk
  • 1 12 cups  cracker crumbs

Directions

  1. Cut steaks in 1 inch cubes.
  2. Mix egg and milk.
  3. Alternate pieces of veal and pork on 6 skewers.
  4. Dip in egg mix then crumbs.
  5. Brown in hot oil.
  6. Put in baking pan.
  7. Add 1 inch water.
  8. Cover and bake at 350* for 40 minutes.
