Chewy Gluten Free Banana Biscuits

This is from the Gluten Free Club. The directions are for drop biscuits, but I'll bet they would work for cut out ones too. The original call for 1 C gluten free flour mix with a bit of chick pea flour thrown in. If you use my Gluten Free Flour Blend, you won't need the chickpea flour, as there is an almond or bean flour (your choice) already in it. I used 3 T brown sugar. It holds together nicely and has a little bit of a chewy texture. Nice tooth feel. :) I might try adding some melted butter instead of the milk next time. I forgot the xanthan gum and it still turned out great! Show more

  3. Add a splash or two of water or milk if it doesn't combine well (too dry).
