Chewy Gluten Free Banana Biscuits

Ingredients
- 1 cup gluten-free flour (see Gluten Free Flour Blend)
- 1⁄2 teaspoon xanthan gum or 1⁄2 teaspoon guar gum
- 1⁄2 cup tapioca flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 3 -4 tablespoons sugar
- 2 large bananas, mashed
- water (optional) or milk, as needed to make it a dough consistency (optional)
Directions
- Combine together all the ingredients, except for the bananas, and mix well.
- Then add in the ripe, well-mashed bananas and mix well.
- Add a splash or two of water or milk if it doesn't combine well (too dry).
- Drop onto a greased baking sheet and bake for 12 minutes or until golden brown.
