Chewy Double Ginger Squares

  1. Preheat the oven to 350 degrees F.
  2. Grease a 13" x 9" cake pan; line with parchment paper and set aside.
  3. In a bowl, whisk together the sugar, molasses, butter, eggs, and vanilla.
  4. In a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves and salt.
  5. Stir into the butter mixture until combined.
  6. Stir in the crystallized ginger and scrape into the prepared pan.
  7. Bake in the centre of the oven until a cake tester inserted in the centre comes out clean, about 40 minutes.
  8. Let cool in the pan on a rack for 45 minutes.
  9. To make the glaze, stir together the icing sugar, butter and lemon juice.
  10. Spread over the squares while still warm.
  11. Let cool completely and cut into squares.
