Cherry Tomatoes Stuffed With Avocado, Quinoa and Bacon

Ingredients
- 2 pints cherry tomatoes
- 1 Hass avocado
- 1 tablespoon lemon juice
- 3 sliced bacon, cooked crisp and chopped
- 3⁄4 cup cooked quinoa
- 1⁄3 cup finely chopped green onion
- 2 tablespoons crumbled blue cheese
- salt and pepper
Directions
- Slice the tops off the cherry tomatoes and scoop out pulp. Place cut side down on paper towels and let drain 15 minutes.
- Meanwhile, mash avocado and lemon juice. Stir in quinoa, green onions and cheese. Season to taste with salt and pepper.
- Spoon quinoa mixture into tomato shells. Refrigerate 1 hour before serving.
