  1. Pour pie filling in unbaked pie shell.
  2. Beat together egg and evaporated milk.
  3. Add sugar, flour, salt, almond, and vanilla extract, beat until smooth.
  4. Stir in coconut.
  5. Pour over pie filling.
  6. Bake at 375, 40-45 minutes until puffed and light brown.
  7. Cool before serving.
