Cherry Cream Cheese Griddlecakes

Ingredients
- 2 cups milk
- 4 ounces cream cheese, softened
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- 1 egg, beaten
- 3 cups flour
- 1⁄4 cup sugar
- 1 cup frozen dark sweet cherries, thawed, chopped
- confectioners' sugar, for topping
Directions
- In a large mixing bowl, combine milk and cream cheese; blend well.
- Add melted butter, vanilla and beaten egg; blend well.
- Add flour and sugar; mix well.
- Fold in chopped cherries.
- Pour about 1/4 cup of batter on a hot, greased griddle or frying pan.
- Flip when bubbles form around edges.
- Fry the other side until lightly browned.
- Sprinkle with confectioners' sugar.
