Cherry Coconut Squares

This is a recipe from a cookbook I got at a garage sale, submitted by Marylou Falstreau. I know there are other Cherry Coconut Square recipes here, but there are maraschino cherries in this version!

• Serves: 9

Ingredients

• Crust

• 1⁄2 cup butter
• 3  tablespoons powdered sugar
• 1  cup flour

• Filling

• 2  eggs, beaten
• 1  cup sugar
• 1⁄4 cup flour
• 1⁄2 teaspoon baking powder
• 1⁄4 teaspoon salt
• 1  teaspoon vanilla
• 3⁄4 cup  nuts
• 1⁄2 cup coconut
• 1⁄2 cup  thinly sliced maraschino cherry, well drained

Directions

1. Mix crust ingredients together and pat into bottom of 9x9x2" pan.
2. Bake at 350 for 25 minutes.
3. While crust is baking, mix filling ingredients together.
4. Put filling mixture on top of crust and bake at 350 for 25 minutes.
