Cherry Chocolate Chip Muffins

Ingredients
- 1 cup all-purpose flour
- 1⁄3 cup sugar
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1 egg
- 1⁄3 cup 2% low-fat milk
- 1⁄4 cup canola oil
- 1 teaspoon almond extract
- 1⁄2 cup halved maraschino cherry
- 1⁄2 cup semi-sweet chocolate chips
Directions
- In a small bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk the egg, milk, oil, and extract together.
- Stir into dry ingredients just until moistened.
- Fold in cherries and chocolate chips.
- Fill paper-lined muffin cups 3/4 full.
- Bake in a preheated 350° oven for 20-25 minutes or until a pick comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.
