Cherry Chicken Ring

Ingredients
- 1 (15 ounce) can cherries, drained, syrup reserved
- 1 (6 ounce) package cherry gelatin
- 2 cups boiling water
- 1 cup cold water
- 2 cups chicken, cooked, diced
- 1 cup celery, diced
- 1 1⁄2 cups mayonnaise
- 1⁄4 cup low-fat sour cream
- 2 tablespoons fresh lemon juice
- 1 dash salt
Directions
- Dissolve gelatin in 2 cups of boiling water.
- Add enough cold water to the cherry syrup to make 1 cup, then add this syrup mixture to the gelatin mixture.
- Pour into an 8-inch ring mold & chill until set.
- In a bowl, combine mayonnaise, sour cream, lemon juice & salt, then add the cherries, chicken & celery, stirring to combine thoroughly.
- To serve, un-mold the gelatin & heap the chicken salad in the center of the ring of gelatin.
