Cherry-Almond Glazed Pork Loin

This is from our church cookbook. The almond/cherry flavor of this dish is outstanding!

  1. Roast pork loin on rack in shallow baking pan, uncovered at 325 for 2 to 2 and 1/2 hours.
  2. In a saucepan, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg and cloves.
  3. Heat to boiling, stirring frequently.
  4. Reduce heat, simmer 2 minutes and add toasted almonds.
  5. Keep sauce warm.
  6. Spoon hot sauce over cooked meat.
  7. Return to the oven about 30 minutes or until meat thermometer measures 170°F.
  8. Baste meat with sauce several times during the 30 minutes.
  9. Serve remaining sauce with meat.
