Chef Dirk Troop's Cranberry Chipotle Kabob Mopping Sauce Chef Di

Chef Dirk Troop created this recipe to be cooked on the Troops BBQ Kabob Buddie. This recipe was created around Thanksgiving time and that is what inspired the use of cranberries. The sauce is a nice combination of sweet and spicy, while the sugars provide a nice caramelizing when basted onto the kabobs. The sauce is great with turkey, duck, chicken, venison, lamb and pork.

Ingredients

• 11  ounces cranberry juice
• 2  ounces dried cranberries
• 5  ounces carrots, blanched and chilled
• 4  ounces brown sugar
• 3  ounces  smoked chipotle peppers
• 1  tablespoon Chinese five spice powder
• 3  minced fresh garlic cloves
• 3  ounces soy sauce
• 3  ounces  orange juice
• 1  egg white
•  kosher salt

Directions

1. Marinate beforehand for a more intense flavor (optional).
2. Add all ingredients to a bar blender and blend smooth.
3. Mop frequently.
