Chef Compton's Scalloped Oysters (Multnomah Athletic Club)

I remember this from when I was a kid... so, so good! It was always on the buffet table at the MAC Club in Portland, OR when we would go there on special occasions. My Mom recently gave this to me, but I have yet to try it on my own so prep time is an estimate and I really am not sure on the cooking time so I left it blank. Show more

Serves: 10-12

Ingredients

  • 1  pint  willapoint  oyster
  • 1  pint  whole milk
  • 6  eggs
  • 1  lb  soda cracker
  • 14 teaspoon white pepper
  • 12 teaspoon salt

Directions

  1. Preheat oven to 300 degrees.
  2. Grind or chop oysters with a sharp knife (not too finely). Beat eggs and add oysters and milk to the beaten eggs. Mix well.
  3. Crumble crackers by hand (not too finely). Fold into oyster mixture, adding salt and pepper. Let mixture stand until firm.
  4. Pour into a casserole dish. Place dish in a pan of water and bake in preheated oven until firm (like a custard).
  5. Serve at once.
