Chef Compton's Scalloped Oysters (Multnomah Athletic Club)

Ingredients
- 1 pint willapoint oyster
- 1 pint whole milk
- 6 eggs
- 1 lb soda cracker
- 1⁄4 teaspoon white pepper
- 1⁄2 teaspoon salt
Directions
- Preheat oven to 300 degrees.
- Grind or chop oysters with a sharp knife (not too finely). Beat eggs and add oysters and milk to the beaten eggs. Mix well.
- Crumble crackers by hand (not too finely). Fold into oyster mixture, adding salt and pepper. Let mixture stand until firm.
- Pour into a casserole dish. Place dish in a pan of water and bake in preheated oven until firm (like a custard).
- Serve at once.
