Cheezy Peas Casserole

Ingredients
Peas in Cheese Sauce
- 6 3⁄4 teaspoons butter
- 6 3⁄4 teaspoons all-purpose flour
- 3⁄8 teaspoon salt
- 1⁄8 teaspoon white pepper
- 2 1⁄4 cups milk
- 1 1⁄8 cups cubed process cheese (recommendedTops Cheezy Melt or Velveeta)
- 32 ounces frozen peas, thawed (2 packages - 16oz each)
Crumb Topping
- 1 cup finely crushed wheat crackers
- 2 tablespoons grated parmesan cheese
- 2 tablespoons butter, melted
Directions
- Sauce– In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add cheese; stir until melted. Stir in peas; cook 1 – 2 minutes longer or until heated through.
- Topping– Toss together crackers, Parmesan cheese and butter.
- Spread Peas with Cheese Sauce into a 9x13x2 dish. Add crumb topping over mixture.
