Cheesy Spinach Rice Pilaf

Ingredients
- 2 tablespoons extra virgin olive oil
- 1⁄3 cup orzo pasta
- 1 garlic clove, finely chopped
- 1 cup white rice, like texmati brand
- 1 3⁄4 cups chicken stock or 1 3⁄4 cups broth
- salt & freshly ground black pepper
- 4 cups fresh spinach, chopped
- 3⁄4-1 cup grated parmigiano reggeano cheese
Directions
- Rinse the rice.
- Heat the olive oil in a fry pan over medium heat.
- Toast the orzo to a golden brown.
- Add the garlic to the pan and cook for another 30 seconds.
- Add the rice, broth, salt and pepper and bring to a boil.
- Cover the pot, reduce the heat and simmer for another 15 minutes until the liquid is absorbed.
- Fold in the chopped spinach and grated cheese.
