Cheesy Potatoes O'Brien Casserole

Cheesy potato deliciousness! Great side dish with baked ham. Can be made with leftover ham pieces as well for a "scalloped potatoes" type casserole. Buttermilk can be substituted by using 1 c sour cream and about 1/2 c milk to thin it out to a pourable consistency. Show more

  1. Preheat oven to 350 degrees.
  2. Spray casserole dish with cooking spray.
  3. In a large skillet, heat the oil and fry the potatoes until they brown lightly. Add seasonings to your taste (salt, pepper, garlic powder, paprika) while they are cooking.
  4. In a bowl, combine buttermilk and 1 cup of cheese.
  5. Pour buttermilk mixture over the hash browns while in the skillet and stir together until mixed.
  6. Spread potatoes in casserole and top with remaining cheese.
  7. Cover and cook for 30-45 minutes or until cheese is bubbly and beginning to brown.
