Cheesy Potatoes and Smoked Sausage

This is a great recipe that can be altered to your specific taste. Inexpensive to make as well.

Serves: 4-6

Ingredients

  • 10 -12  medium potatoes (peeled or skin on, chopped to about 2in)
  • 2  links smoked sausage, cut up
  • 2 -4  cups cheese (of your choice, depends on how cheesy you want it)
  • 12 cup butter (salted or unsalted, 1/2 melted, 1/2 sliced)
  •  salt (to taste)
  •  pepper (to taste)
  •  garlic powder (to taste)
  • 1  small onion, chopped (I use frozen chopped)
  • 1  small green pepper, chopped (I use frozen chopped)

Directions

  1. Preheat oven to 400 degrees.
  2. In a 9x13 pan place chopped potatoes.
  3. Pour melted butter on potatoes, stir until well coated.
  4. Sprinkle with salt, pepper, and garlic powder to taste and stir.
  5. Place the remaining butter on top.
  6. Cover with foil and bake for 30 minutes.
  7. While potatoes are cooking saute onion and green pepper in pan.
  8. After 30 mins are up add sausage and onion/green peppers to potatoes.
  9. Stir to coat and replace foil.
  10. Bake an additional 30 minutes or until potatoes are tender.
  11. Remove from oven and add cheese, place in oven for about 5 minutes or until cheese is melted.
  12. Stir and Serve.
