Cheesy Potato Bacon Ale Soup #5FIX

Serves: 6-8

Yields: 10 cups

Ingredients

  • 8  slices  thick cut  hickory smoked bacon
  • 3  cups  Simply Potatoes Diced Potatoes with Onion
  • 2 (10 3/4ounce) cans  Fiesta nacho cheese soup
  • 6  soup cans water
  • 1 (12 ounce) bottle ale, room temperature

Directions

  1. Heat a large pot, chop bacon into small pieces, cook until crisp. Place on paper towel lined plate and set aside. Leave 2-3 tablespoons of the bacon grease in the pot, add the potatoes, cook until the bacon grease is absorbed and the potatoes are heated thru. Stir in the 2 cans of cheese and 4 cans of water, stir and mix well. Simmer over medium/low heat covered for 10 minutes, stir occasionally. Remove from heat and with an immersion blender, blend the potatoes thoroughly into the soup. Add the ale, simmer 10 more minutes uncovered, if the soup gets too thick, thin it with the remaining water. Serve soup hot with bacon on top.
