Cheesy Party Pasta

A great dish to make if you are having lots of company or to take to a potluck. Add whatever you think you would like. I have made this in a large chafing dish and served it at a birthday party. You can also make this in a large foil or hotel tray. OR scale it down to have just with your family. I always use low fat ingredients, but this works with full fat products as well.   1. In a large skillet, combine beef, garlic and onions. Over medium heat, cook and stir until beef is lightly browned. Drain fat if necessary.
  2. Add celery, tomato sauce, tomatoes, mushrooms with juice, oregano, basil, salt and pepper. Bring to a boil, reduce heat and simmer 20 minutes.
  3. Cook pasta and drain. Preheat oven to 350°F.
  4. In a 4 quart casserole (or larger) casserole, layer 1/2 the pasta. Top with 1/2 of the meat sauce, 1/2 of the sour cream and 1/2 of the cheddar. Repeat layers and top with mozzarella cheese.
  5. Cover and bake for 45 minutes. Remove cover and continue to bake until cheese has melted, about 10 minutes.
