Cheesy Jalapeno Bake

Ingredients
- 4 boneless chicken breasts
- 1⁄4 cup chopped green bell pepper
- 2 jalapenos, finely chopped
- 1 large garlic clove, minced
- 1 tablespoon olive oil
- 2 tablespoons butter or 2 tablespoons margarine
- 2 tablespoons flour
- 1 1⁄2 cups milk
- 1 cup shredded sharp cheddar cheese
- 3 drops hot sauce, to taste (or a dash of ground cayenne pepper)
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon ground black pepper
- 12 -15 jalapeno pepper rings (optional)
- 4 cups nacho chips (optional)
Directions
- Spray shallow baking pan with cooking spray and place chicken breasts in pan. In a separate bowl, combine chopped bell peppers, jalapenos, minced garlic, and olive oil; Once thoroughly combined, sprinkle over chicken and place in the oven at 350 degrees F for 20 minutes.
- While chicken bakes, melt butter in a saucepan. Once melted, add flour and stir for 1 minute. Whisk in milk; continue whisking until sauce thickens. Remove from heat and stir in the cheese, hot pepper sauce, salt and pepper.
- Remove chicken from the oven; Pour cheese sauce on chicken and return to oven for an additional 20 minutes or until done.
