Cheesy Ham and Apricot Toasts

Yields: 24 toasts

Ingredients

  • 24  baguette, slices (1/4 inch slices)
  • 2  tablespoons stone ground dijon mustard
  • 2  tablespoons mayonnaise, dressing
  • 18 teaspoon  chipotle-flavored  hot pepper sauce (optional)
  • 5  ounces  sliced  black forest ham, torn into bite-size pieces
  • 12 cup  dried apricot, sliced
  • 1  cup Canadian cheddar cheese, shredded (two year old)
  • 2  tablespoons green onions, finely chopped

Directions

  1. Preheat broiler. Arrange baguette slices on a rimed baking sheet. Broil until lightly golden on both sides, about 1 minute per side. Cool to room temperature.
  2. Blend mustard and mayonnaise; add chipotle sauce if using. Spread a thin layer on one side of each baguette toast. Divde ham and apricots equally between toasts. Toss cheese with green onions and sprinkle evenly over all. Broil 2-3 minutes or until cheese is melted.
