Cheesy Grits

Serves: 4-6
Ingredients
- 2 1⁄4 cups water
- 1⁄2 cup quick-cooking grits
- 4 ounces Velveeta cheese, -cubed
- 1 dash garlic powder
- 1 dash smoked paprika
- 1⁄2 cup shredded any cheese
Directions
- Preheat oven to 350 . Meanwhile In a saucepan slowly stir grits into boiling water . Reduce heat to medium/low( simmer), stir and then cover .
- Cook 12-14 minutes or until thick, stirring occasionally.
- Add velveeta cheese and garlic powder into grits mixture and stir until cheese melts .
- Place mixture into a buttered casserole dish (if a double recipe , which is what you would do to feed a crowd of 12 or more ) , otherwise a small casserole type of dish for 4 or so people is fine. Sprinkle with paprika and some extra cheese (whatever you fancy-I have used more velveeta, parmesean, Romano , cheddar….).
- Bake uncovered for 15-20 minutes . I like a nice browning to occur to cheese on top .
- Serve warm or is even better next day after being in fridge for breakfast w/ eggs:).
