Cheesy Grits

Given to me by neighbor in Memphis . She served it every Christmas Eve AMfor neighbors and friends .

  1. Preheat oven to 350 . Meanwhile In a saucepan slowly stir grits into boiling water . Reduce heat to medium/low( simmer), stir and then cover .
  2. Cook 12-14 minutes or until thick, stirring occasionally.
  3. Add velveeta cheese  and garlic powder into grits mixture and stir until cheese melts .
  4. Place mixture into a  buttered casserole dish (if a double recipe , which is what  you would do to feed a crowd of 12 or more ) , otherwise a small casserole type of dish for 4 or so people is fine. Sprinkle with paprika and some extra cheese (whatever you fancy-I have used more velveeta, parmesean, Romano ,  cheddar….).
  5. Bake uncovered for 15-20 minutes . I like a nice browning to occur to cheese on top .
  6. Serve warm or is even better next day after being in fridge  for breakfast w/ eggs:).
