Ingredients
- 1⁄4 cup all-purpose flour
- 1⁄4 teaspoon salt
- 1⁄4 cup butter or 1⁄4 cup margarine, melted
- 4 eggs, beaten
- 1 cup cottage cheese
- 1 (4 ounce) can chopped green chilies, drained
- 8 ounces shredded monterey jack cheese (2 cups)
- 1 (4 ounce) jar whole pimientos (optional)
- green pepper (optional)
Directions
- Combine flour, salt, and butter in a large bowl.
- Add next 4 ingredients; mix well.
- Pour mixture into a lightly greased 10x6x2" baking dish.
- Garnish with pimiento and green pepper, if desired.
- Bake, uncovered, at 375° for 30 minutes.
