Cheesy Easy Potato Soup

This is my husband's perfect comfort food--and ready in a flash!!

Serves: 8-10

Ingredients

  • 4 -5  potatoes, cut in bite sized pieces (peeled or not, your choice)
  • 1  lb polska kielbasa, cut in bite sized pieces
  • 2 (10 1/2ounce) cans  cheese soup
  • 1  cup salsa
  • 14 cup cornstarch

Directions

  1. Boil potatoes in your soup pot until soft. Do not drain!
  2. Add kielbasa, cheese and salsa.
  3. Simmer on medium low for 10 minutes.
  4. Mix 1/4 cup cornstarch in 1 cup water.
  5. Add to the soup pot, stirring constantly until the soup is thick enough for your taste.
  6. Continue to cook 5 more minutes.
  7. Season with ground pepper to taste and serve.
  8. You won't need salt.
