Cheesy Carrot Casserole

  1. Boil enough water to cover carrots.
  2. Pre-heat oven to 350°F.
  3. Peel and slice carrots into bite sized pieces.
  4. Boil carrots for 10 minutes. Drain.
  5. Place carrots in 9 x 13 casserole dish.
  6. Sprinkle brown sugar over carrots.
  7. Melt butter and Velveeta. Pour over carrots.
  8. Crumble Ritz crackers over casserole.
  9. Bake for 30-35 minutes.
