Cheesy Baked or Grilled French Bread

This is very easy, cheesy, full of flavor and a great make ahead bread loaf for a dinner party, BBQ or just family. I love the hint of goat cheese for a little tang or for a little kick; but you could substitute gorgonzola or blue cheese; or even parmesan or romano too. Serves: 4-8

Yields: 6-8 Bread Slices

Ingredients

  • 1  loaf  unsliced  French bread (I don't like a baguette for this)
  • 3  ounces cream cheese, softened (1 small package)
  • 34 cup  shredded mozzarella cheese
  • 14 cup  grated monterey jack cheese
  • 1  tablespoon  goat cheese cheese, softened
  • 2 12 tablespoons butter, softened (unsalted)
  • 4  scallions, chopped fine (white and green parts)
  • 1  tablespoon  minced garlic
  • 1  tablespoon  minced parsley
  • 1  pinch salt

Directions

  1. Filling -- In a small bowl, mix the butter, cheeses, scallions, garlic, parsley, and salt. Mix well.
  2. Bread -- Cut slices approximately 1" apart across the bread. Don't cut all the way through and spread the butter filling in each one of the slices (on both sides of the bread). Wrap in heavy duty foil.
  3. Bake or Grill -- Wrapped in the foil, bake in the oven at 400 degrees or on the grill (not on direct heat) for 5 minutes top side down first. then flip and continue to cook another 5 minutes. Now, open up foil from the top and cook another 5 minutes to finish melting the cheese and lightly toast the top of the bread. Note, cooking in the oven can take a few more minutes and grilling times can really differ depending on your grill.
