Cheesy Bacon Puff

This recipe is made with ingredients that most of us have on hand, and it only takes 10 minutes to prepare. It's based on an old family recipe where the same amount of just 4 ingredients were all measured in a small tumbler, so it's ideal for children to make as there's no weighing involved. Ingredients

  • 5  ounces plain flour (a small tumbler full)
  • 9  fluid ounces milk (a small tumbler full)
  • 3  large eggs, beaten
  • 2  slices bacon, chopped very finely
  • 1  pinch mustard powder
  • 8  ounces  mature medium cheddar, grated (A heaped tumbler full)
  • 1  tomatoes, sliced into 6 slices. (For a tumbler use a medium child's glass)

Directions

  1. Put a baking sheet in the oven and preheat to 200*C (425*F).
  2. Butter a round, shallow, ovenproof dish, about 8 inches in diameter.
  3. In a large bowl beat the flour, milk, egs, bacon, mustard powder and about two thirds of the cheese with a generous pinch of salt and a good grinding of pepper, until everything's combined into a runny batter.
  4. Tip the batter into the prepared oven dish,lay the tomato slices on top (don't worry if they sink, they're supposed to) and scatter over the remaining cheese.
  5. Set the dish on the hot baking sheet and bake for 35 to 45 minutes until it has puffed up and is crispy and golden brown.
  6. Leave it to cool for a minute or two, but not too long or it will deflate.
  7. Serve the puff cut into wedges with a crunchy salad on the side.
