Cheesy Appetizer

Yields: 8-10 slices
Ingredients
- 1 sheet puff pastry
- 2 cups mozzarella cheese
- 1⁄4 cup parmesan cheese
- 1⁄2 cup mayonnaise
- 4 tomatoes
- 8 fresh basil leaves
Directions
- Unfold one thawed sheet of puff pastry dough on a sheet of clear plastic wrap or waxed paper.
- Dice the four tomatoes into small pieces(I usually slice the tomato in half and slightly squeeze the tomato before I dice it so that it isn't too juicy. That's up to you.).
- Put the diced tomatoes into a medium sized mixing bowl.
- Tear the 8 basil leaves into small pieces and add them to the same bowl.
- Add the remaining ingredients to the same bowl.
- Using a spoon, mix all the ingredients together.
- Spread the mixture on the puff pastry dough making sure it is even and to the edges.
- Choose the edge closest to you and roll the dough up so that it is in one tight roll.
- Seal the long edge by pressing.
- Chill in the refrigerator for about 15 minutes (You do not have to do this. I just find it's easier to slice and easier to prepare ahead of time and have ready to slice and cook whenever I am.).
- When ready to cook, just slice the roll into 1/2 inch slices and place them on a parchment lined cookie sheet.
- Cook in a 425 degree oven for 15 minutes.
