Cheeseburger Soup

Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1 medium carrot, peeled and coarsely grated
- 2 garlic cloves, minced
- 1 1⁄2 lbs ground sirloin
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon fresh ground black pepper
- 1⁄4 cup ketchup
- 2 tablespoons yellow mustard
- 2 medium potatoes, peeled and chopped
- 2 (14 ounce) cans beef broth
- 1 (10 3/4ounce) can condensed cheddar cheese soup
- 1⁄2 cup shredded sharp cheddar cheese
Directions
- Heat oil in large pot over medium heat. Add onion and carrot and cook for 5 minutes. Add garlic and cook another minute. Add beef, salt, and pepper and cook for 6-8 minutes, or until brown. Drain any fat.
- Stir in ketchup, mustard, and potatoes and cook 3 minutes.
- Add beef broth. Bring to a boil, then simmer about 10 minutes.
- Stir in cheddar soup; cook 2 minutes or until heated through. Garnish with shredded cheese.
