Cheeseburger and Fries Casserole

A friend of mine gave me this recipe and when I lost it, I searched this site for one like it. Not finding one, I asked her for it again, my family loved it so much I had to get this one. So in order to not lose it again, I am posting it here. I am posting it as it was written, however I modified it for my dietary needs. I used reduced fat mayonnaise and substituted fat free evaporated milk for the half and half, and instead of 3 whole eggs I used 3 egg whites and 1 whole egg. It still turns out delicious. I have also made it adding 1/4 cup of real bacon bits (it doesn't entirely negate the reduced fat and calories) to the ground beef mixture after draining the excess fat from the ground beef.   1. Spray an 8 inch square pan with cooking spray. Preheat oven to 350 degrees Fahrenheit.
  2. In a skillet, brown the ground beef with onion, garlic and salt and pepper to taste.
  3. Drain excess fat from the ground beef.
  4. Put the mixture into the prepared pan and spread evenly over bottom.
  5. Evenly sprinkle 1 cup of the cheese over the beef mixture.
  6. Whisk together eggs, mayo and half and half. Pour evenly over the beef mixture in the pan.
  7. Season, as desired, with salt and pepper.
  8. Top with frozen french fries, spreading evenly over top.
  9. Season fries with additional salt and pepper as desired, as well as a sprinkling of garlic powder to taste.
  10. Bake for 35 minutes, or until fries are crispy. If you would like crisper fries, turn on the broiler for a few minutes.
  11. Top with remaining 1 cup of cheese, and return to oven just until cheese is melted.
  12. Cut and serve with desired toppings. Shredded lettuce, dices tomatoes, chopped dill pickles, ketchup or mustard.
