Cheese Tortellini With Squash Puree

My husband loves this!! This is quick and easy and a nice change from tomato sauce.

Serves: 4

Ingredients

  • 1  lb  cheese tortellini
  • 11  ounces  frozen squash, puree, thawed
  • 12 cup milk
  • 2  tablespoons butter
  • 1  tablespoon parmesan cheese
  • 14 cup fresh parsley, chopped
  •  salt and pepper

Directions

  1. Cook tortellini according to package directions, drain and set aside.
  2. Combine remaining ingredients, except parsley, salt and pepper, in a saucepan.
  3. Cook over medium heat until heated through and combined. If it is too thick, add a bit of water.
  4. Combine sauce with cooked tortellini, sprinkle with parsely and serve.
