Cheese-Stuffed Zucchini

I've had this recipe for years. Got it from a diabetic cookbook.

  1. Trim of ends of zucchini, cut in half lengthwise.
  2. Simmer in boiling salted water, about 5 minutes. Drain and cool.
  3. Scoup out centers and reserve for filling.
  4. Combine pulp with remaining ingredients, mix well, then stuff zucchini with mixture.
  5. Sprinkle with paprika.
  6. Broil until browned.
