Cheese Souffle

Serves: 6-8
Ingredients
- 3 1⁄2 tablespoons butter
- 4 tablespoons flour
- 1 1⁄2 cups milk
- 6 egg yolks
- 8 egg whites
- 1 pinch salt
- 1⁄8 teaspoon cream of tartar
Flavoring
- 1 cup grated cheese (any kind)
- 1 teaspoon prepared mustard
- 1 pinch nutmeg
- 1 dash cayenne pepper
Directions
- Preheat oven to 400 degrees.
- Melt the butter and add the flour. Stir in the milk gradually. Remove the pan from the heat and add the egg yolks one at a time.
- Stir in the cheese, mustard, nutmeg and pepper. Add a pinch of salt and 1/8 teaspoons cream of tarter to the egg whites and beat until stiff.
- Fold the cheese mixture into the egg whites and transfer to the prepared souffle dish.
- Place the souffle in the oven and immediately reduce the heat to 375° degrees.
- Bake 25 Minutes.
