  1. Melt butter in pan and add the flour with some of the milk, so that its a paste. Add the remainder of the milk and all of the grated cheese, return to the heat and gradually bring to the boil, stirring constantly.
  2. A non stick saucepan is good - or you can actually microwave it on medium or less, still stirring as much as possible to stop lumps . add a little salt if needed.
  3. you can reheat in the microwave if necessary.
